Yummy Chicken Quesadillas
Tonight, I made these wonderful quesadillas. I served them with pico de gallo, sour cream, and guacamole. They are so easy to make and really don't take any time at all. I fixed these quesadillas for a group of ladies that are at my MOPS table this year. We had a great time getting to know each other and eating this yummy little dinner. Chicken Quesadillas
10-12 Flour tortillas
2-3 boneless chicken breast
8 ounces Mexican Tomato sauce (salsa de chile fresco)
1 large onion
1 red bell pepper
1 green bell pepper
2 cups Monterey Jack cheese-grated
1 cup of Sharp Cheddar cheese-grated
2 tablespoons olive oil
Cut chicken into small cubes. Pour red sauce over chicken. Set aside.
Chop onion, and peppers into large slices. Heat frying pan over high heat and add olive oil. Cook vegetables over high heat until they start to get brown/black. Remove from pan and set aside.
Return pan to high heat, then dump in the chicken with the sauce. Cook, stirring occasionally, until chicken is done. Mix chicken and vegetables together. Grate cheeses.
In a separate small frying pan, heat butter. Place a tortilla in the pan, then layer on cheese, vegetables, and chicken. Top with a little more cheese and a second tortilla. Flip tortilla and add another small amount of butter so the tortilla isn't dry.
Remove from pan and slice into wedges. Serve with sour cream pico de gallo, guacamole. Enjoy!!
