Skillet Corn Bread

This is very easy to make and only takes a few seconds to whip up, throw in a skillet and then the oven.

Ingredients
1 cup yellow cornmeal
1/2 cup all-purpose flour
1/3 cup sugar
1 tsp salt
1 Tbs baking powder
1 cup buttermilk
1/2 cup milk
1 egg
1/2 tsp basking soda
1/4 cup shortening
2 Tbs shortening for the skillet

Preheat oven to 450

In large mixing bowl place cornmeal, flour, sugar, salt, and baking powder. Stir, and set aside.

In small mixing bowl place, buttermilk, milk, and egg. Stir together. Then add the baking soda and stir.

Pour milk mixture into cornmeal mixture. Stir with fork until combined. In a separate small bowl melt 1/4 cup of the shortening. Slowly add the melted shortening to the batter, stirring until just combined.

In an iron skillet over high heat melt the 2 Tbs. of shortening. Pour batter into the hot skillet. Cook on stove top for about 1 minute, then remove place in oven and bake for about 20 minutes, until golden brown.
