Homemade Chicken N' Dumplings With Mashed Potatoes

Homemade Chicken n Dumplings
3-4 cooked boneless chicken breast
3 cans of chicken broth
2 cups Flour
1/4 tsp of poultry seasoning
1/2 tsp baking powder
2 TBS butter
1 pinch salt
1 cup milk

Preparation Instructions

Boil chicken breast in separate pot, add salt pepper, and garlic salt. Just a dash of each. Add enough water to cover chicken breast. Bring to a boil cook until chicken is no longer pink in middle. Cut chicken into small chunks and set aside. Save about 3-4 cups of chicken water.

In a bowl, combine the flour, poultry seasoning, baking powder and salt. Cut the butter into the dry ingredients with a pastry blender. Stir in the milk, mixing with a fork until the dough forms a ball.

Heavily flour a work surface. You’ll need a rolling pin and a pizza cutter to cut the dumplings with.

Roll the dough out thin with a heavily floured rolling pin. Dip your cutter in flour and cut the dumplings in squares about 2″x2″. It’s okay for them not to be exact. Some will be different sizes and shapes, that is ok.

Use a floured spatula to put them on a heavily floured plate. Just keep flouring between the layers of dumplings. Or if you don't want to roll them out just drop by fork into boiling broth. To cook them, bring the broth to a boil. Add 3-4 cups of the chicken water that you set aside earlier to broth. Bring to bowl. Drop the dumplings in one at a time, stirring while you add them. The extra flour on them will help thicken the broth. Cook them for about 15-20 minutes or until they are not doughy tasting. Add the cooked chicken to the pot and you’re done!


Yummy Mashed Potatoes


3-4 large baking potatoes
1/4 tsp lemon juice
1 egg white
1/2 stick of butter-real butter
1/2 cup of half and half cream
salt and pepper to taste

Peel potatoes, cut in cubes. Place potatoes and lemon juice in enough water to cover potatoes. Bring to boil until potatoes are tender. Drain. Place back into pot. Add egg white, butter, and half/half cream. Mix with mixture until smooth and creamy. Add more or less cream to reach your desired consistency.

Serve Chicken N' Dumplings with a side of Mashed Potatoes and Corn. Very delicious meal. Go ahead have seconds I did.
