Salsa Chicken Crockpot
Well, its getting that time of the season to drag out your crock pot. So, I've been told. I don't normally cook in my crock pot. If I do its a roast or brisket. But a friend of mine asked for some crock pot recipes so I had to help her out. This was such an easy recipe and it made me wonder why I don't cook more often in my crock pot. You pull it out add all the ingredients, and your done. It cooks for hours and you have this perfectly yummy dinner that took no time at all.
Ingredients
3-4 boneless breast of chicken
1 1/2 cups of salsa
1/4 cup cilantro
1 can of black beans (drained and rinsed)
1 can of corn (drained)
1 tsp cumin
1 tsp of mexican chili powder
dash of salt
Place chicken in crock pot, then layer on rest of ingredients. Cook for approx. 6-7 hours. Chicken will fall apart when you pick it up. You can serve on rice, or on tortillas. I tried rice noodles and it was just ok. I then tried it with the tortillas and it was great, I topped it with shredded cheese and sour cream. Very yummy!!!
