Mmmmm....... Fish Taco's
I love fish taco's never had them until I made them. I don't think people back in Michigan eat them. I've never seen or heard of them until I moved to Texas. But they're yummy!!
Ingredients
1/2 cup all-purpose flour
2 Tbsp Mexican chili powder
2 tsp. cumin
2 tsp cilantro
6 catfish fillets
1 tsp salt
1/4tsp pepper
1/4 cup olive oil
8-fajita-size corn tortillas
Combine flour, chili powder, cumin, and coriander in bowl, set aside.
Cut catfish into bit size pieces. Sprinkle with salt and pepper. Toss fish into flour mixture, shaking off excess. Heat large pan with olive oil on medium-high. Cook catfish for about 3 minutes.
In another small frying pan, spray with cooking oil, and cook each tortilla. I do a small frying pan that only holds one and just spray a small amount of cooking oil in each time. Cook each side for about 30-40 seconds or until warm.
Once catfish is done place in tortillas with desired toppings. This goes great with my salsa that I posted a while back, crumbled fresco cheese, fresh cilantro and sour cream. Enjoy!!
